Sunset Fruit Compote

Ingredients

  • 10 Cups Assorted Fresh or Frozen Fruit
  • 2 Cups Water
  • 1 Cup Fresh Mint Leaves
  • 1/3 Cup Honey
  • 6 Ounces Lemon Juice

Directions

  1. In a medium saucepan combine water, mint and honey. Bring mixture to a boil. Reduce heat, cover and simmer for 10 minutes.
  2. Strain into a medium mixing bowl. Discard mint leaves. Stir in lemon.
  3. Allow to cool.
  4. Pour mixture over fruit.
  5. Cover and chill until needed, up to 8 hours.
  6. Toss before serving.
  7. Sprinkle with fresh mint leaves.
