Stuffed Mini Peppers

Ingredients

  • 10 Mini Sweet Peppers
  • 1 Cup Seedless Red Grapes
  • 5 Tablespoons Cream Cheese
  • 1 Cup Crumbled Feta Cheese
  • 2 Tablespoons Almond Milk
  • Dash of Cayenne Pepper
  • 1 Tablespoon Thinly Sliced Chives
  • ½ Teaspoon Rosemary, Finely Snipped

Directions

  1. Halve and seed sweet peppers. Set aside.
  2. Cut up grapes; set aside.
  3. In a food processor combine feta, cream cheese, milk, and cayenne pepper. Cover and process until smooth. Fold chives and rosemary into the feta mixture.
  4. Fill each pepper half with about 2 teaspoons of the feta mixture.
  5. Top with grapes.
  6. If desired, top with additional rosemary and/or cayenne pepper.
