Grilled Romaine Salad

Ingredients

  • ¼ Cup EVOO
  • 1½ Tablespoons Stevia
  • 1 Teaspoon Dried Rosemary
  • 1 Teaspoon Dried Thyme
  • ¼ Teaspoon Pepper
  • 8 Plum Tomatoes, Quartered
  • 2 Large Sweet Onions, Thinly Sliced
  • Grilled Romaine:
  • 4 Romaine Hearts
  • 2 Tablespoons EVOO
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Pepper
  • Dressing:
  • ¼ Cup EVOO
  • ¼ Cup Balsamic Vinegar
  • 1 Tablespoon Stevia
  • ¼ Cup Grated Parmesan Cheese

Directions

  1. In a large bowl, combine the first 6 ingredients.
  2. Add tomatoes and onions; toss to coat.
  3. Transfer to a grill.
  4. Grill, covered, over medium heat for 8-12 minutes or until tender. Set aside.
  5. For grilled romaine:
  6. Cut romaine hearts in half lengthwise, leaving ends intact.
  7. Brush with oil; sprinkle with salt and pepper.
  8. Place romaine halves cut side down on grill.
  9. Grill, covered, over medium heat for 3-4 minutes on each side until slightly charred and wilted.
  10. Coarsely chop romaine.
  11. For dressing:
  12. Place the oil, vinegar, garlic and stevia in a food processor, cover and process until smooth.
  13. Top with tomato mixture and process until smooth.
