Gingered Fruit Compote

Ingredients

  • ¾ Cup Water
  • ½ Cup Stevia
  • 4 Teaspoons Lemon Juice
  • 1 Tablespoon Snipped, Crystalized Ginger
  • 4 Cups Assorted Fruit

Directions

    For syrup:
  1. In a small saucepan, combine the water, stevia, lemon juice, and ginger.
  2. Bring to boiling; reduce heat.
  3. Simmer, covered, for 5 minutes.
  4. Transfer mixture to a small bowl; cool.
  5. Chill, covered, in the refrigerator about 1 hour or until cold.
  6. For Fruit:
  7. In a large serving bowl, combine desired fruit.
  8. Pour chilled syrup over fruit; toss gently to coat.
  9. Chill, covered, in the refrigerator for up to 6 hours.
  10. To serve, spoon fruit and syrup into dessert dishes.
