Fresh Tomato, Basil Shrimp Pasta
Ingredients
- 2 Garlic Cloves, Chopped
- 1 Medium Onion, Chopped
- 3 Tablespoons EVOO
- ½ Teaspoon Crushed Red Pepper
- ¼ Teaspoon Salt
- 4 Large Tomatoes, Peeled and Chopped
- 4 Ounces Shrimp/Person
- Fresh Basil
- 1 Cup Chicken Broth
- 1 Cup Past Water
- 1 Cup Pecorino Romano Cheese
Directions
- Sauté onion in olive oil.
- Add garlic and red pepper for 2 minutes.
- Add tomato, chicken broth and pasta water.
- Add shrimp for 4 minutes.
- Remove from heat fold in basil.
- Finish with grated Pecorino Romano cheese.
