Classic Cheesecake

Ingredients

    For the Crust:
  • 1½ Cups Ground Pecans
  • ½ Cup Stevia
  • 1½ Teaspoons Cinnamon
  • 6 Tablespoons Butter
  • 1 Egg, Lightly Beaten
  • 1 Teaspoon Vanilla Extract
  • For the Filling:
  • 16 Ounces Cream Cheese
  • ¾ Cup Sour Cream
  • ½ Cup Stevia
  • 3 Eggs
  • Dash of Salt
  • 1 Small Lemon, Juiced
  • 1 Tablespoon Lemon Zest
  • 2 Teaspoons Vanilla Extract

Directions

  1. Preheat oven to 325°F.
  2. To make crust:
  3. Combine the ground pecans, sweetener and cinnamon in a large bowl.
  4. Stir in melted butter, egg, and vanilla.
  5. Press the crumb mixture into the bottom and up the sides of a 10” pie pan.
  6. To make the filling:
  7. Combine the cream cheese, sour cream, Stevia and salt in a bowl.
  8. Using an electric mixer, beat at low speed to blend.
  9. Add the eggs, lemon juice, lemon zest and vanilla.
  10. Beat at medium for 1 minute.
  11. Pour the filling into the crust.
  12. Bake for 50 minutes.
  13. Variation ideas:
  14. add ½ cup cocoa powder and toping with chocolate or substitute the lemon juice and zest for lime and top with fresh berries and mint leaves.
