Cinnamon Rolls

Ingredients

    For the Dough:
  • 2 Cups Almond Flour
  • ¼ Cup Coconut Flour
  • ¼ Teaspoon Baking Soda
  • ½ Teaspoon Sea Salt
  • ¼ Cup Coconut Oil
  • 2 Tablespoons Honey
  • 2 Eggs (Room Temperature)
  • 1 Tablespoon Vanilla
  • ¼ Cup Coconut Sugar
  • For the Filling:
  • ½ Cup Coconut Sugar
  • 2 Tablespoons Cinnamon
  • 2 Tablespoons Coconut Oil
  • ¼ Cup Raisins
  • ¼ Cup Pecans, Chopped
  • For the Glaze:
  • ¼ Cup Honey
  • ¼ Cup Coconut Oil
  • ¼ Teaspoon Almond Extract
  • 2 Teaspoons Vanilla

Directions

  1. Preheat oven to 350°F.
  2. Lightly grease pan with Coconut oil.
  3. Combine the dry ingredients and mix to remove any lumps.
  4. Combine the wet ingredients in another bowl and mix well.
  5. Mix dry ingredients with wet ingredients slowly to create the dough.
  6. Chill dough for 15 minutes.
  7. Using two pieces of parchment paper and the dough between them, roll out the dough into a large rectangle.
  8. Remove top piece of parchment paper and add the filling ingredients.
  9. Use the bottom piece of parchment paper to roll the dough.
  10. Cut the roll using a serrated knife cut the roll into 9 pieces.
  11. Place in greased pan.
  12. Bake for 20 minutes.
  13. Drizzle the glaze over the cinnamon rolls and enjoy.
