Chocolate Protein Muffins

Ingredients

  • 1 cup Plain Greek Yogurt
  • 3 Ripe bananas
  • 2 Eggs
  • 2 cups Gluten free rolled oats
  • .25 cup Coconut sugar
  • 1.25 tsp Baking powder
  • .5 tsp Baking soda
  • 1 tsp Vanilla extract
  • ½ cup Chocolate sweetened with stevia
  • 1 scoop No Whey pea protein powder

Directions

  1. Preheat oven to 400 degrees.
  2. In a food processor, combine the yogurt, bananas, eggs, oats, coconut sugar, baking powder, baking soda, vanilla and protein.
  3. Process until dough is smooth and creamy.
  4. Fold in chocolate.
  5. Evenly divide in a muffin pan.
  6. Bake 15 – 20 minutes.
