Tomato, basil, and shrimp pasta

Ingredients

  • 4 whole tomatoes
  • 1 onion, diced
  • 2 cloves of garlic, chopped
  • 3 TBSP EVOO
  • ¼ tsp red pepper flakes
  • 12 Large Shrimp
  • .5 cup fresh basil, chopped
  • 1 box brown rice pasta
  • 1 cup non-fat chicken broth

Directions

  1. Score and core fresh tomatoes. Boil 5 minutes and peel off skin. Dice tomatoes
  2. Heat EVOO in a sauce pan. Sautee onion, add garlic, red pepper, diced tomatoes and add chicken broth.
  3. Simmer and reduce 10 minutes.
  4. Add Shrimp cook for 4 minutes.
  5. Add fresh basil and pasta.
  6. Toss, serve and enjoy.
