Greek Sauteed Veggies

Ingredients

  • 2 zucchini’s sliced
  • 2 yellow squash sliced
  • 1 yellow onion sliced
  • Marinade
  • 2 TBSP extra virgin olive oil
  • 2 TBSP freshly squeezed lemon juice
  • 1 teaspoon sea salt
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoons ground black pepper
  • pinch of cayenne pepper
  • 3 large garlic cloves minced

Directions

  1. Combine veggies with marinade and place in refrigerator for a min 20 minutes to overnight.
  2. Place 1-2 TBSP extra virgin olive oil in a pan and sauté until desired doneness.
