Carrot Cake Protein Balls

Ingredients

  • 2 medium carrots
  • ½ cup of walnuts
  • ¾ cup of pecan halves
  • ¾ cup of dates
  • ½ tablespoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon nutmeg
  • 1.5 tsp of liquid vanilla stevia
  • Small amount of coconut for dusting
  • 1 scoop of No Whey protein powder

Directions

  1. Slice carrots up to make it easier to blend.
  2. Blend carrots in a food processor/blender then add dates when properly blended.
  3. Add the rest of the ingredients.
  4. Roll into 8 balls and dust for coconut.
  5. Refrigerate for 30 minutes before consuming.
