Butternut Squash Slaw

Ingredients

  • 1 tsp Liquid Stevia or 2 TBSP Honey
  • 2 TBSP EVOO
  • 3 TBSP Sherry Vinegar
  • 1 lb Butternut squash, peeled and grated
  • 1 bunch Flat-leaf parsley, leaves chopped
  • 2 TBSP Dried, chopped cherries
  • ¼ cup Sunflower seeds, toasted
  • Salt and pepper to taste

Directions

  1. Dressing - whisk together the stevia/honey, EVOO and vinegar in a bowl, set aside.
  2. Combine all other ingredients in a bowl; mix together.
  3. Drizzle dressing over slaw.
  4. Chill in refrigerator a minimum 30 minutes before serving.
