One Skillet Tuscan Chicken


  • 4 Chicken Breasts
  • 1 tbsp oil (olive, coconut, unsalted butter or ghee)
  • 5 cloves of garlic, diced
  • 12 ounce can diced tomatoes with Italian spices
  • 1 large onion, diced
  • Zucchini noodles


  1. Heat a large, heavy pan on high until warm.
  2. Add oil and heat until shimmery (but NOT burning/smoking) about 20 seconds.Brown chicken on each side, about 1 minute each (5 minutes if it is a thick cut).
  3. Reduce heat to medium-low, add onions.
  4. Stir onions and flip chicken after 2 minutes on each side.
  5. Add tomatoes and garlic.
  6. Simmer until tomatoes are soft and sauce has set up- about 5-8 minutes.
  7. Serve on a bed of pasta or zucchini noodles
